Ingredients

  • Cookies:
    • 2 cups (240 gms) AP flour
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1/2 cup butter (115 gms), room temperature
    • 1/4 cup (60 gms) vegetable oil
    • 1 cup (100 gms) granulated sugar
    • 1 large egg
    • 1 tsp pure vanilla
    • Zest of one lemon
  • Glaze:
    • 1 cup (130 gms) confectioner’s sugar
    • 1-2 Tbs lemon juice

Directions

  1. Preheat oven to 350 F and line 2 baking sheets with parchment paper.
  2. Sift together flour, baking soda, and salt. Set aside.
  3. In a stand mixer fitted with a paddle attachment, cream the butter and oil on medium high speed until well combined. With the mixer still running, add the sugar and continue beating until light and fluffy, about 3 minutes. Scrape down the sides of the bowl.
  4. Add the egg, vanilla, and lemon zest and beat until well combined.
  5. Turn the mixer on low. Add the dry ingredients and mix until fully combined.
  6. Use a cookie scoop to drop 12 equally sized cookies onto each prepared tray about 1 ½ inches apart. Gently pat each cookie down slightly.
  7. Bake for 12-15 minutes, or until cookies are lightly golden around the edges.
  8. Remove the cookies from the oven and transfer to racks to cool.
  9. In a small bowl, whisk together the confectioner’s sugar with the lemon juice until smooth. The glaze should be thin enough to flood the top of the cookie without running off the edge.
  10. Once the cookies are cool, use a teaspoon to place the glaze on each cookie using the back of the spoon to spread the glaze across the cookie. Allow the glaze to set, about 15 minutes, before serving.
  11. Enjoy!
